The meat (or fish), supplied to the plant in frozen blocks, is sent to the grinder. The operator then loads the grinded meat to the cooking mixer equipped with a pre-heater agitator.

A loading cells system controls the exact dosing of the ingredients so that salt, starch and water are added and mixed accordingly to the correct formulation.

In sequence the process then continues through the colloidal mill or a micro-cutter, the cooker, the de-aerator, the homogenizer, the pasteurizer and the in-container sterilizer.
