The vegetables and the legumes can be processed fresh or frozen. The fresh product is washed, peeled if necessary, graded and sorted, diced or sliced to the required dimensions. The frozen vegetables and legumes are instead sent directly to the first grinding section. The product is then weighed and conveyed, by means of specially designed trolleys, to a mixer, equipped with loading cells, for dosing the variuos recipe ingredients accurately.

The mixer pre-heater agitator completes the phase with a gentle warming up of the product batch which is subsequently sent through a refiner or a colloidal mill to the cooker for the pre-set time. A heat-exchanger then provides a continuous product flow, at the optimal temperature, to the de-aeration phase.

The process is concluded with homogenization, pasteurization, filling and in-container pasteurization or sterilization.
