The slices are precooked in the screw cooker to gelatinize the starch and make the product firmer.
The machine is supplied complete with P.I.D. temperature control; the steam is injected in the water by means of a specially designed injector.
The bearings are externally mounted to extend the life of the components.
The slices extraction is operated by a “ferris wheel”.
The blancher’s top can be opened completely for easy cleaning.
