A sauce is thick liquid food that usually is not consumed by itself but it is used in preparing other dishes, for example pasta, to add flavour. Many sauces are based on tomato, but also on other fresh or pre-cooked vegetables (such as pesto sauce), and even fish or meat.
- Sauces are usually packed in glass jars or cans and then heat-treated to assure safe conservation without any deterioration of the organoleptic characteristics.
- Food companies that process products for catering sector, and so need big size packages, can choose to pack their vegetable sauces (such as tomato sauces or pesto) in the innovative retortable pouch package, a more ecological, lighter and easier to handle solution. Retortable pouches allow a reduced thermal treatment thanks to the flat profile of the package that allows faster heat penetration; in this way they assure increased product quality.
In response to the market’s growing requests for thermal treatment of flexible packages, in 2001 GEA Levati Food Tech decides to design, develop and patent its range of Bagfill, vacuum filling machine for pre-made retortable pouches.

Heat treatment technology
GEA Levati Food Tech offers a complete range of retort sterilizers that are able to gently sterilise without any damage all sort of packs, by means of two different sterilizing cycles:
- Saturated steam sterilisation cycle (specific for metallic cans): heating and sterilisation phases made with saturated steam without air counter-pressure and cooling phase made with rain water recycled by centrifugal pump and air counter-pressure.
- Water rain sterilisation cycle (specific for glass jars or aluminium cans): heating, sterilisation and cooling phases made with rain water recycled by centrifugal pump and air counter-pressure.
